Debt Free and Ready to Flee

Well people I have a very huge and exciting announcement to make......drum roll please.......WE ARE DEBT FREE!!!!!! HORRAAYAYAYAY!!!  I'm thrilled...the end, thought I would share this with you all.  Due to a very generous bonus I got at work, Eric and I were able to pay off all our bills, and have plenty to go in savings.  It feels soosososos good!  Well to be honest it didn't all go in savings haha we did have a nice little shopping spree today!

Eric has been begging for months now and has been saving to finally get a game system.  So today to celebrate the end of another amazing semester and the end of his awesome internship I got him his x-box finally!  Needless to say I lost him the rest of the night!  I think someone waslittle excited!


Oh but don't worry I sure got spoiled too! I mean you can't go cruising without some cruise attire.....well maybe I went a little over board, but I found so many cute things, and lots of great deals so I just couldn't resist! When laying everything out to see what I got I realized something about myself. My favorite color has always been turquoise, but I have soo many things this color that I was forbidden from buying anything else. Well looking at this collection I believe I have found a new favorite color. Ha ha I didn't even realize I had gotten so much in this color until I laid it all out together!  Any who I have now discovered that my favorite color is like a salmon/coral pink. I love it! I got a couple shirts, a blazer, a pencil skirt, a cardigan, and some pants in the color. :) I love them all! I also got some new sunglasses, jewelery, perfume, sandals to replace mine that are broken, some good walking shoes for the cruise, a few pairs of shorts, some new swimming suits, a hat :) I love that one, another skirt, a few dresses....um I think that's about it.  I'm super excited to wear all my new stuff!  Oh yeah and I was so proud of myself, I finally was brave enough to venture into white pants. I bought some white shorts and some white capris. Now my fear was confirmed, 2 minutes into wearing them I got crap all over them, but I still love them! They are perfect for summer, and I'll just have to learn to be more careful when I am wearing them.







Any ways I think this means we are officially ready to get going on our trip!  Oh man I can't hold back the excitement.  I hope this week goes by fast!  I can't wait to sink my feet into some sand!



It's Dinner Time!

Okay so I have been a bit behind lately, but it's mainly because I lost my camera charger and haven't been able to get the pictures on here, but now I'm making up for lost time.  Here are a bunch of the meals I have tried the last few weeks.  Let me know if anyone wants any recipes.  I'm not very good at doing recipes, I mainly just throw things in by taste, but I'm happy to share what I did if any one thinks they look tasty.

Here I made a creaming pesto sauce with grilled chicken on bowtie past.  YUMMM!  I loved the sauce it turned out really great!



 Here we were really in the mood for some salmon, but at the store just small fillets for 2 was just as expensive as this entire fish!  Crazy right? So naturally we had to get the whole fish!  What a bargain! 

So we were going for a teppanyaki feel and did some grilled mushrooms, onion, and zucchini.




Finished them off with some terriyaki sauce and some sesame seeds and it was delish!


Grilled us up some salmon on our loving new grill.  Added some sauce, lemon juice and sesame seeds.  Then topped with some lemon slices and cilantro.




It was sooooo good!  The salmon was amazing! And we had ton left over for another fun meal :)


 So for our Easter dinner Eric and I were pretty home sick so we decided to bring home to us.  We both picked a family favorite and cooked it for each other.  He choose to do his moms cheesy potatoes, and I did my dads stuffed mushrooms!  They were both amazing and really reminded us of home.  Certainly brought warmth to our hearts and rolls to our bellies :S that part wasn't so good haha but ohwell.










Then I paired them with a salad and a pork roast.  I don't remember everything I threw in there, but the concoction I put in the crock pot with the roast was AMAZING. 

It was so tender it pretty much just fell apart on its own!



So we still had some of that salmon left, and I wanted to use it while it was still fresh.  I wanted to do something new with it, but Eric loved the terriyaki stuff and wanted it again.  So I did it again with some moderation's.


 I made my own version of chow mien with some whole wheat noodles, carrots, onion, asparagus, and a few other things.  It was actually really good!  Eric is still getting use to the whole wheat noodle things, but he'll get there.


Here I made a ranch grilled chicken with thyme and Rosemary seasoning, and then with some smashed potatoes and oven roasted asparagus.


The smashed potatoes were really good.  You just boil them with the skin on like you're making mashed potatoes, but then you pull them out a little early, smash them down a bit and fry them until they are crispy on both sides.  Then drizzle the dressing over them.  Delish.

Last but not least I needed to share my official southern meal.  I thought being in Texas now it was only natural that we did a good ol southern fried chicken.  So I did my first ever fried chick, corn on the cob, mashed potatoes with white gravy (my first gravy ever!), and some rolls.

Crafting Time

A few weekends ago I finally had some time, so  I worked on a few projects and finally  finished up our living room walls.  Here is what it looked like before

I finally filled the rest of the frames and made a few little crafty things to add to the wall.

I love peacocks so I framed a peacock feather with some scrapbook paper behind it that matches the color of our living room



Then I  made the simons sign by painting a board and some letters, and gluing them on. I found some burlap material around the house that I cut up and made as the hanging bow thing.





 I made this by just mod podging some of our engagements onto a board I had at the house.  I added some wire and ribbon at the top so that I could hang it.




  I then had an empty whole up top to the left so I found a frame that was lying around, glued some new paper to it so it was the right color, and framed a flower I had.

 

So it was pretty much improvising with whatever I had around the house, but not bad for what I had!

I'm pretty happy with it.  Heck anything beats having plain white walls!

Setting Sail!


I forgot that I hadn’t updated on here about our exciting news!  Well it’s exciting to us and probably the most exciting thing that’s happened in our life in awhile.  WE BOOKED OUR CRUISE!!! I’m super stoked.  It was nice to go on a little weekend getaway after we got married, but we have been waiting to go on a big trip for awhile.  We are going to
Montego Bay, Jamaica
Grand Cayman, Cayman Islands
Paradise Pier Grand Cayman
 and Cozumel, Mexico

  We set sail on May 6th.  BAH its coming sooooo soon I’m ecstatic!  It will be so nice to get away just the two of us and go somewhere far away from west Texas ;) haha.  I’m excited to get some sun and some beach action.  It’s been awhile since I have been to the beach and I can’t wait!  We are snorkeling with sting rays too J YAH!  I was hoping for Dolphins haha but Mr. Eric wasn’t sold. Darn this marriage thing where I have to compromise ;) and don’t get my way %100 of the time! Just kidding!  I’m excited and I’m glad we found something we both love so much!  Eric is most excited for the food I think haha.  I am too of course but not at the same time.  I’m trying to workout extra hard now and be really good so that hopefully I can maintain it on the cruise instead of gaining 15 lbs. 

A few weekends ago we went to Lubbock to party it up.  We drove up Friday night and had a nice dinner and stayed in a hotel.  Saturday morning we woke up and met a youth group from our church at the Lubbock temple to do some baptisms for the dead.  I had never been inside the Lubbock temple so I was excited, and it was beautiful! 
It was such an amazing experience.  They had enough leaders there that I didn’t do a whole lot, but it was nice to just get to sit and ponder and observe the youth! 

After that we went to go catch the end of my friend from works daughters softball game. Ugh tongue twister.  Then we headed to go SHOPPING.  I mean you can’t go on a cruise without cruising attire haha.  We got some awesome finds and some really good deals!  I already found 2 swimming suits too in one place and in one try!  I was thrilled!  I have never had that luck shopping for swimming suits, and I thought it was going to be even harder than usual this time, but NOPE! 
After shopping Eric dragged me to three stooges.  Just kidding I walked in willingly.  He loved it so I was happy that he got some laughs.  After we  got out of the movie and started to drive home a huge hail storm began.  It was crazy.  Cars were stopped and piled up under any shelter you could find. We kept driving hoping for it to get better but it didn’t.  Even with our wipers going full speed it still felt like you were driving in the middle of the ocean.  Quite the experience if I do say so myself. 
 It was super scary. Oh but don’t worry the minute we got into Midland it was like there was no storm at all.  They didn’t even get any rain! How lame is that.  Oh well, weather is one thing I’ll never understand.  Well we hope the people of the Caribbean get ready because  e squared is on their way!

Hair

So back in January I really needed something new so I chopped like 8 inches off by hair and died it red.  I really loved it, but it's now growing out and the color is fading and I need to decide what I want to do now.  I haven't had the short hair thing in a while and I really am loving it, but I love long hair too!  I need help peeps!  What are your votes?  Grow it out and go long again? Or keep it short?  Eventually I want to do this.

I know it's kinda crazy and drastic and may be stupid but it's kinda on my bucket list to have a pixie cut sometime in my life.  Of course I need to lose like 100 pounds to pull it off haha but one day I will have this, one day!

Here are some other pictures of Hair I really love and am torn between.  I have been inlove with this kind of hair coloring for awhile ever since the lead on one of my favorite shows did it last year, but its becoming pretty popular so I'm not sure I should do it now.

AHHAHAH DECISIONS DECISIONS. Oh yeah and then on top of all this I need to decide what to do with my bangs.  I have ALWAYS had bangs.  Right now they are probably the longest they have ever been and I need to choose if I want to try growing them out or cut them again. I usually do a side bang, or the last few times i have done straight across.  I'm not sure what I want.  EEKS!  HELP ME PLEASE!  Okay guys what do you think?  The 3 of you that read this.  I need all the help I can get so please cast your votes!
